How to Make Spicy Lamb Crumbles

Fall is here, and Thanksgiving is just around the corner! If you want to prepare a unique dish that the whole family will love, follow this recipe for the Spicy Lamb Crumbles. It is perfect for the Thanksgiving dinner, or even just as a casual taco or sandwich filling!

Ingredients

1 lb lean minced lamb
1 onion, finely chopped
2 garlic cloves, crushed
1 medium aubergine, thinly sliced
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon dried thyme
1 teaspoon chopped fresh red chili
1 tablespoon tomato puree
125 ml red wine or water
1 medium courgette, grated
50g sultanas
410g can chickpeas, rinsed and drained
Black pepper, freshly ground
100g plain flour
1/4 cup olive oil

Directions

  • Preheat oven to 180°C/fan, 160°C/gas 4. Heat a large saucepan and add the lamb, searing it over high heat until browned. Add the onion and garlic then reduce the heat and cook for about 5 minutes, stirring often.
  • Grill the slices of aubergine for about 2 minutes on each side to soften them. Stir the spices and herbs, tomato puree and red wine or water into the lamb mixture and simmer for 5 minutes. Then add the courgette, sultanas, and chickpeas. Remove from heat and season with black pepper.
  • Spoon half the mixture into a deep baking dish. Layer the aubergine on top then add the remaining mince mixture. Sift the flour into a mixing bowl and rub the oil until the mixture looks like fine breadcrumbs. Stir.
  • Lastly, sprinkle over the mince mixture and bake for 30-35 minutes.
